Title: Mini Peanut Butter Cheesecakes

12 Vanilla wafers
1pk(8 ounces) plus 1 pk (3 ounces) cream cheese Cheese, softene
1/4cSugar
2 Eggs
1/2tsVanilla
12 Milk chocolate-covered
  Peanut-Butter cups

Heat oven to 350 degrees. Line 12 medium muffin cups, 2-1/2 X 1-1/4 inches, with paper baking cups. Place 1 wafer, flat side down, in each cup. Beat cream cheese and sugar in medium bowl until fluffy. Beat in eggs, one at a time. Fill cups three-fourths full. Top filling in each cup with 1 peanut butter cup. Bake about 15 minutes or until centers are firm; cool 15 minutes. Cover and refrigerate at least 2 hours. Serve with fresh fruit or Raspberry-Currant Sauce, if desired. 12 SERVINGS; 195 CALORIES PER SERVING.
